Partners Seth Gibbs and Emily Peters share a passion for great drinks and genuine hospitality. They founded Inspired Spirits in 2018 to bring the best in craft cocktails and bar service to any location without compromising the quality or experience of a night out at a great bar. Seth and Emily are known for their adventurous palates and love of fresh, seasonal flavors, and they love to incorporate both into delicious cocktails. They find inspiration in New York's vibrant culinary scene, finding unique flavors in sometimes the most unexpected places. Some of their favorite inspirations come from Chinatown, Chelsea Market, and the East Village.
Now that we’re all staying at home more than usual these days, Seth and Emily realized how many people were missing the well-made cocktails they were used to getting in bars & restaurants, and discovered a new passion for teaching folks at home to make the same kinds of drinks we make in our restaurants. They’ve worked with everyone from brand-new home bartenders to at-home enthusiasts to budding professionals, all who are looking to improve their cocktail skills and knowledge.

Emily is a creative at heart who's studied psychology, photography, and culinary arts. While she was earning her degrees, she discovered a love of bartending that grew into what (half of) Inspired Spirits is today. She started out in photography and catering, developing a love for quality food and drink, as well as an eye for aesthetics & detail. She then moved on to bartending at cocktail clubs in NYC while she earned her Master’s degree from Columbia University. She loves teaching and making seemingly complicated and pretentious subjects accessible to anyone. Seth and Emily instantly bonded over being science nerds, and thoroughly enjoy geeking out over food science to push the boundaries of craft cocktails.
Seth is a service industry veteran with over 15 years in bars and restaurants. He has risen the ranks from prep cook to beverage director—there’s not a role in the service industry he hasn’t filled in his career. He has a passion for infusing syrups and tinctures to elevate cocktails. Until March 2020 when the pandemic hit, he was overseeing the cocktail program at Wallsé in the West Village, NYC & is proud to be part of the staff to help maintain a Michelin star for their 15th year in a row. Emily and Seth are now beverage & restaurant consultants, helping restaurants improve their operations and cocktail programs, especially in such trying times. They were thrilled to put on their first Pop-up Speakeasy in November of 2019, which was a sold out event and a fantastic experience.
